Steps

  1. Preheat oven to 375° and line a 9x9 metal baking pan with parchment paper
  2. Mix flour, oats, sugar, baking powder, salt & cinnamon in a medium bowl
  3. Mix melted butter, maple syrup & vanilla with a spatula until evenly combined
  4. Place mixture in baking pan and spread evenly
  5. Bake 10 minutes, then let cool for 10 minutes
  6. Mix eggs, lemon juice, white sugar & sorghum flour in a medium bowl with a hand mixer
  7. Spread filling evenly over baked crust
  8. Bake for 25 minutes
  9. Cool before slicing and frost with powdered sugar (optional)
